傅孟柏熱愛攝影，大四期間，開始拍廣告，但立志成為攝影師。傅孟柏從沒想過當藝人，在學妹簡嫚書的介紹下踏進娛樂圈。傅孟柏至今已累積拍攝超過30支廣告，一連接拍了知名歌手田馥甄、張韶涵、丁噹的MV，成了天后級歌手愛用的男主角。 2015年參與《一代新兵之八極少年》演出，這是傅孟柏首次主演男主角，飾演鐵血總教官，傅孟柏也因此劇而成名，2016年以《一代新兵之八極少年》入圍第51屆金鐘獎『戲劇節目男主角獎』提名。2017年以《最後的詩句》榮獲第52屆金鐘獎『迷你劇集／電視電影男主角獎』。2018年以電影《范保德》入圍第55屆金馬獎『最佳新演員獎』。
